Algunos pensarán en el encierro como incapacitante, cercenador creativo, serrucho de libertad. Es una realidad: para algunos chefs y restauranteros 2021 significó el fin de negocios que aún seguimos extrañando. Para otros, el año que agoniza, implicó repensar conceptos y recetas para sobrevivir, supervivir y proponerle algo fresco a la Ciudad de México. Los días de menús recalcitrantes de dieciocho tiempos quizás van quedando atrás. Lo de hoy son los restaurantes de cocina franca orientados a saciar el antojo a través del mejor ingrediente disponible. Porque si uno va a salir a arriesgar el pellejo y poner la digestión en manos de otro, mejor que valga la pena. En el año pasaron varias cosas en el ámbito restaurantero chilango. Las calles se llenaron de buenas hamburguesas –a Dios, gracias–; tuvimos el boom de los Taco Tuesday y, sobre todo, abrieron marisquerías y cocinas con toques que nos acercaron a los olores de la costa. Abrió, por ejemplo, el restaurante que para muchos se lleva los laureles del año. Fernanda Balmaceda, editora adjunta, destaca la apertura de Mi Compa Chava del chef Salvador Orozco (a.k.a Gallo Orozco). Este chef se ha especializado en comida de mar con el objetivo de defender el trabajo que hacen los pescadores mexicanos en el Pacífico. Después de una destacada trayectoria en el Grupo Bull & Thank, junto a Daniel Ovadía, Salvador decidió lanzar su carreta de mariscos al estilo de Sinaloa en un esquema take out y delivery en plena pandemia. Fue hasta 2021 que Chava abrió las puertas de un restaurante hecho y derecho en la colonia Roma en el que se ofertan los mejores productos de los mares mexicanos.  “Mi compa Chava ha saltado a la fama por increíbles platillos como lo son la Señora Torres, una torre de mariscos con atún aleta amarilla de Zihuatanejo; pulpo de Campeche, camarón crudo y cocido de Sinaloa y callo de hacha de Sonora bañados en una mezcla de limón, chile morita y tomates tatemados y el imperdible ceviche Tripón, con callo de lobina, callo de hacha, camarón crudo y cocido, pulpo, chile serrano, limón, cilantro, chile chiltepín, pimienta negra y Clamato”, recomienda Fernanda. Otro que amamos fue Marea de nuestra chef favorita Lula Martín del Campo, de cuyas recetas destacamos las que puedes ver aquí si eres suscriptor de KiwiPro o bien, Costela, de la Top Chef Alexander Suastegui. Su rincón en la colonia Cuauhtémoc se especializa en la cocina de Tijuana, de la Baja. El surf and turf deambulan por cada parada del menú. Hay desde ostiones rasurados y ceviche de sierra hasta su espectacular taco de lengua a la barbacoa o su sándwich de birria. “La cuidad ya extrañaba esas capas de sabores encontrados y texturas divertidas que crea la chef Suastegui. Para mí esta era una de las aperturas más esperadas tras el cierre de Lucas Local hace algunos años”, confirma Shadia Asencio, directora editorial de kiwilimón.  No se escapa de la lista la apertura de las dos sucursales de Con Vista al Mar, del chef Irak Roaro, de quien quizás haya sido el mejor año o al menos, el uno de los más prolíficos (poco tiempo después de haber abierto la segunda sucursal en la Roma, realizó la apertura de Casa Olympia en los confines de Polanquito). A Con vista al mar se va a comer taquitos y ceviches frescos servidos en platos de plástico, mesas de aluminio y acompañados de chelas bien frías. El taco “Conozco al chef” y el taco “Chilango” nos han hecho hasta pedir para llevar. Aquí no hay que dejar de lado el postre: un flan como de esos que hacía la abuela, de textura inigualable. Hablemos ahora de hamburguesas. Este año abrieron propuestas maravillosas como las de Cencerro o las Margarita Burguer, pero las favoritas de Shadia Asencio se esconden en el menú corto y contundente de Londres 207. Escondidas en el menú de este gastropub de la colonia Juárez están las sliders de wagyu y queso Roquefort que van entre pan brioche hecho en casa. Y si de tacos y tacos Tuesday hablamos, no podíamos dejar de mencionar Cariñito Tacos. Sofía Danis, editora de Kiwilimón Recipes, recomienda esta singular barra de tacos con una marcada influencia del sudeste asiático. La exótica taquería ofrece cinco opciones, entre ellas, un suculento pork belly confitado, el cantonés, el issan, el thai, además de una imperdible opción vegetariana (berenjena de Laos). Aquí, cada taco es aderezado con distintas salsas y coronado por diferentes hierbas para lograr que sabores ácidos, dulces, y salados converjan en un balance perfecto a cada bocado. Además de Boing, Topo Chico y cervezas, Cariñito tiene una modesta selección de vinos y hasta kombucha para que marides tus tacos. Aunque los socios de Cariñito concibieron este proyecto el año pasado, no lograron abrir al público hasta marzo debido a las restricciones de la pandemia. Coincidentemente, el concepto de esta taquería pareciera haberse planteado para la nueva normalidad, pues la barra de tacos está al aire libre, no hay asientos y la forma de pago es cashless.   “No te puedes perder el nuevo integrante del menú, el cautivador taco criollo: un taco de pork belly frito aliñado con una deliciosa salsa de ají peruano y una rica salsa criolla hecha a base de cebolla morada, habanero y cilantro, y decorado con crujientes chips de camote". No es de mar ni hay tacos pero Gretel Morales, redactora web, no quiere dejar de destacar Yella, la nueva propuesta gastronómica del chef Ricardo Verdejo, quien hace unos meses estaba detrás de Flavo Flavo –uno de los doce mejores restaurantes nacidos durante la pandemia de COVID-19 por The World’s 50 Best–. Hace un par de meses, después del cierre de Flavo Flavo, Verdejo anunció la creación de Yella, un proyecto que aterriza en una serie de pop-ups en México y el extranjero. Hasta el momento, el chef chileno ha llevado sus increíbles creaciones a la Ciudad de México, Nueva York, Bogotá y Londres. “Este 2022, espero volver a probar el roll de papaya, espárragos, poro frito y vinagreta de cítricos, un plato complejo que combina sabores inesperados y que explotan en el paladar. Otro imperdible es la panacota con ciruelas y almendra verde”, nos cuenta Gretel.  2022 llega pronto y esperemos que, además de lo que ya hemos pedido, el año nuevo nos traiga amor en muchos platos y abundancia de buenas aperturas en la Ciudad de México. ¡Sigamos apoyando los comercios locales!
